As part of the 2024/25 Studium Generale programme, an event organised by Rhein-Waal University of Applied Sciences will focus on the world of distillation this coming Tuesday, 14 January 2025, at 6 pm. The Life Sciences Faculty’s research distillery will open its doors in Lecture Theatre 1 on the Kleve campus, offering an insight into the interplay between traditional craftsmanship and modern research.
The event explores the link between time-honoured distilling traditions, scientific curiosity and a sense of regional identity. In collaboration with the Dirker fine spirits distillery, the university’s research distillery will provide a comprehensive overview of the production of brandies and spirits.
Arno Dirker, owner of the distillery of the same name, will explain the finer points of spirits production alongside Dr Marc-Kevin Zinn and Prof. Dr Matthias Kleinke from the Faculty of Life Sciences at Rhine-Waal University of Applied Sciences. They will demonstrate how traditional craftsmanship and state-of-the-art research methods intertwine, elevating the production of high-proof spirits to an art form.
During the event, various aspects of the art of distillation will be explored. A key topic is the selection and quality of raw materials. The speakers, Arno Dirker, Dr Marc-Kevin Zinn and Prof. Dr Matthias Kleinke, will explore how the origin, cultivation and harvesting of fruit, cereals and other ingredients influence flavour development, and explain why careful selection forms the basis for high-quality brandies and spirits.
Closely linked to this are the biochemical processes that take place during fermentation. The experts will explain the complex processes occurring in the mash and demonstrate how the desired flavour profile can be achieved by controlling yeast cultures, temperature and fermentation duration.
Another key focus is on the sensory evaluation of spirits and distilled beverages. The event explores the perception and evaluation of various flavour components such as sweetness, acidity, bitterness and aromas. It illustrates how both laypeople and experts assess the quality of a distillate based on its appearance, aroma and taste.
The event offers an overview of the world of aromas, focusing on the nuances of spirits and distilled drinks. It explains how the art of distillation is continually being developed through innovative scientific approaches. This evening is part of the ‘Cooperation in the Region’ series of events organised by the Studium Generale for the 2024/25 winter semester. As part of this series, Rhine-Waal University of Applied Sciences, in collaboration with experts and regional partners, is presenting further events on topics such as mental health, care and emotional research.
